Beef and Broccoli Lo Mein



We had this last night and it is certainly a keeper. Even the kids agreed! It is actually from Family Fun. My sisters have passed it around and have been telling me it was a winner but I hadn't actually gotten around to making it till last night. I had all the ingredients on-hand except the oyster sauce so I skipped that one. I probably would have only used a drop or two anyway, cause I don't like it very much. I also doubled the sauce- I just don't like it dry at all.

So try it as-is or fix it the way you want...you will not be disappointed!

Ingredients

8 ounces thin spaghetti, broken in half
1 teaspoon dark sesame oil
1 tablespoon vegetable oil
3 cups chopped broccoli
1 1/2 cups sliced onion
1 tablespoon minced peeled fresh ginger
4 garlic cloves, minced
12 ounces sirloin tips, cut crosswise into thin strips
3 tablespoons beef broth
3 tablespoons low-sodium soy sauce
2 tablespoons brown sugar
1 tablespoon oyster sauce

Instructions

Stir the spaghetti into a pot of lightly salted boiling water and cook it according to the package directions. Drain the noodles well, then return them to the pot and toss them with the sesame oil.

Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the broccoli and onion and cook, stirring often, for 3 minutes. Add the ginger and garlic and continue stirring while the mixture cooks for another 30 seconds. Add the sirloin and cook it, stirring often, for 5 minutes or until it is no longer pink.

In a small bowl, mix the broth, soy sauce, brown sugar, and oyster sauce. Add the soy sauce mixture and the pasta to the skillet and continue cooking, stirring often, for 1 to 2 minutes or until everything is heated through. Serve the lo mein hot. Makes 4 to 6 servings.

Grilled Ribeye Steak with Onion Blue Cheese Sauce

Another Pioneer Woman recipe. If you like blue cheese you will drool over this sauce. I made this for Valentine's day and everyone loved it. I'm going to eat the leftovers with a spoon...

Ingredients
  • 2 whole Ribeye Steaks
  • 2 Tablespoons Butter
  • Salt
  • Pepper
  • 4 Tablespoons Butter
  • 1 whole Very Large Yellow Onion, Sliced
  • 1 cup Heavy Cream
  • ½ cups Crumbled Blue Cheese
Preparation Instructions

Salt and pepper both sides of the steaks. Grill in 2 tablespoons butter until medium rare.

Saute onions in 4 tablespoons butter over high heat. Cook for 5 to 7 minutes, or until dark and caramelized. Reduce heat to simmer and pour in cream. Cook for 3 to 5 minutes, or until reduced by half. Stir in blue cheese until melted. Serve steaks on generous portion of sauce.

Easy Pleasing Meatloaf

I got this recipe from Kraft Foods. If you are looking for an easy meatloaf recipe then this is it. My mom says it's nothing like she's had before so I guess it isn't the traditional meatloaf but my family liked it and it was easy!

2 lbs lean ground beef
1 pkg. (6oz) Stove Top Stuffing Mix for Chicken
1 cup water
2 eggs, beaten
1/2 cup Kraft Original Barbecue Sauce, divided

Oven 375. Mix all ingredients except 1/4 cup barbecue sauce. Shape meat mixture into oval loaf in 13x9 inch baking dish; top with remaining bbq sauce.

The Easiet Roast You Will Ever Make

This is tasty and way too easy:

Get a Roast
Get a Bottle of Laury's Steak and Chop (found in the marinades section)
Put roast in ziploc with Laury's over night in fridge(put a bit of water in bottle and shake to get remaining seasonings at bottom of bottle).
Pour Roast and seasoning in crock-pot and add a bit more water to cover half of roast.
Cook on low for 7-8 hours.

Eat.

Asian Grilled Flank Steak

Ok ladies, I need more entree ideas, so please post your favorites! Here is one of mine.
1 beef flank steak (1-1/4 lb.)
3/4 cup BULL'S-EYE Original Barbecue Sauce
1/4 cup soy sauce
1/4 cup thin green onion slices
2 Tbsp. sesame seed
1 clove garlic, minced
1/4 tsp. ground ginger

SCORE steak on both sides; place in shallow glass dish or large resealable plastic bag.

MIX remaining ingredients. Pour over steak; cover dish or seal bag. Marinate in refrigerator at least 2 hours or overnight. Remove steak from marinade; discard marinade.

PREHEAT grill to medium-high heat. Grill steak 15 to 20 minutes or until cooked through, turning every 8 minutes. To serve, cut steak across the grain into thin slices.

Thai Beef Stir Fry

This is tasty!!! It is also fairly simple. Hope you like it as much as I do:

Thai Beef Stir-Fry

½ c brown sugar
2 tbls cornstarch
2 c beef broth
1/3 c soy sauce
1 tsp onion powder
1 tsp ground ginger
¼ tsp hot pepper sauce
2 tbls boneless beef sirloin steak, cut into thin strips
6 tbls olive oil, divided
2 c fresh cauliflower
1 ½ c julienned carrots
4 c broccoli florets
2 c mushrooms
¼ c peanut butter
Spaghetti
½ c chopped peanuts

Combine first 8 ingredients until smooth. Set aside. In a large skillet or wok, stir-fry beef in 4 tbls oil until meat is no longer pink. Remove and keep warm.
In the same skillet, stir fry cauliflower and carrots in remaining oil for 5 minutes. Add broccoli, stir fry for 7 minutes. Add mushrooms, stir fry 6-8 minutes longer or until the veggies are crisp-tender.
Stir broth mixture and add to the pan. Bring to boil; cook and stir for 2 minutes ‘til thick. Reduce heat, add beef and peanut butter. Cook and stir on medium until blended. Serve over rice or noodles. Sprinkle with peanuts.
